Chicken with scallion and ginger sauce


Ingredients
Chicken breast - cut cube
1 bunch scallion - cut 1 inc per piece
3 inches young ginger - cut slices
1 clove garlic - chopped

Marinate
1 tbsp shao xing wine
A bit of corn starch
A bit of salt
Sauce
1 tbsp soy sauce
1/2 cup water
1 tsp sugar

Method
1. Marinate chicken for 30 minutes and set aside.
2. Heat 2 tbsp of oil then add in ginger. Stir fried till fragrant then put in garlic.
3. Then add in marinated chicken. Stir to coat in oil.
4. Add the sauce and cook until sauce has thickened slightly.
5. Add in scallion, cashew nuts and 1 tbsp of shao xing wine and stir fried a while. - Serve -
