Potato Tortilla

Ingredients
1 Russet Potato; cut into wedges
1 tablespoon chopped garlic
2 eggs
1 tsp paprika ground
1 tbsp parsley
Salt and freshly ground black pepper to taste

Method
1. Heat oil and cook potato until tender and lightly colored.
2. Add garlic, parsley and saute till aromatic.
3. Beat eggs, and season to taste with chilli powder, salt and pepper.
4. Pour eggs onto cooked potato.
5. Flip another side to continue cooked until the eggs a little bit brown. - serve -

Fried French Bean with Eggs

Ingredients
1 packets of french bean - cut into thin slices for easy to cook
3 garlics - chopped
2 eggs - beat the eggs with some salt and pepper
Salt to taste

Method
1. Heat the oil and put in garlics.
2. Put in french bean to fry. Then, put in salt and stir fry until cooked.
3. Pour in beated eggs and stir a bit until cooked. - Serve -

Note: French bean will take longer time to cooked. Can put in a bit of water while frying it to prevent burnt.

Braised Pork Belly


My dad favourite dish.

Ingredients
1 pork belly - cut into small pieces
5 garlics
1 tsp sugar
2 tbsp dark soy sauce
1/2 tsp salt
1/2 or 1 cup of water

Methods
1. Heat a bit of oil and put in garlics to fry. (don't put too much oil as pork belly will release a lot of oil while cooking)
2. Put in pork belly and stir fly a while.
3. Put in sugar, dark soy sauce and 1/2 cup of water.
4. Stir and mix well.
5. Cover wok with lid and braised for half an hour. - Serve -

Note: Do not let the sauce to dry up. Add water when going to dry.
You can put some hard boiled egg to braised as well.

Salted Vege Soup (咸菜豆腐汤)

Ingredient
1 block tofu - cut into 4 pieces
1 pack salted vege
1 tomato - cut into cubes
2 drumsticks (can put more)

Seasonings
Salt to taste
1 tsp G powder

Methods
1. Blanch drumsticks in boiling water. Rinsed with water.
2. Place all ingredients in a pot.
3. Boil for 1 or 2 hours. (prefer boil longer)
4. Add seasonigs to taste. - Serve -

Sausage Mushroom Spaghetti

Husband is working today. So cook pasta for lunch and watching Beauty Knows No Pain.
Ingredients
Spaghetti (one person portion)
Sausage (cut into slice)
White button mushroom
Some onion slices
Traditional pasta sauce
2 tbsp water
Methods
1. Put water, olive oil and salt into a medium pot and bring to boil.
2. Put in spaghetti and cook until tender. Remove and set aside.
3. Put 1 tbsp olive oil into frying pan and stir fry onion until fragrant.
4. Stir in sausage and mushroom.
5. Then put in pasta sauce, water and continue stir a while.
6. Pour cooked pasta sauce on cooked spaghetti. - Serve -

Red Snapper Porridge

Ingredients
Red snapper (cut into small pieces)
Ginger (finely slice)
Salt
1 tsp of G-powder

Method
1. Heat 2 tbsp of oil then add in ginger.
2. Fry the fish until cook and put aside.
3. Put rice in rice cooker and add in salt and G-powder.
4. Bring it to boil.
5. Once porridge is ready, stir in the fish with ginger and cook another 5 minutes.
6. Garnish with fried shallots with oil and some soy sauce (based on own preference). - Serve -

Braised Tofu

Ingredient
2 tofu
1 mushrooms; sliced
2 cloves chopped onions
A bit of shallots
A bit red chili
1 egg; beat
Some corn flour

Sauce
2 tbsp oyster sauce
2 tbsp soy sauce
1 tsp sugar
1.5 cup of water/ soup stock (高汤)

Fried tofu
1. Cut tofu into desired size (not too small)
2. Cover tofu with corn flour and dip into egg.
3. Fry tofu into golden brown.
4. Pour remaining egg into tofu and fry.
5. Remove fried tofu and put aside.

Method
1. Heat oil and put in garlics, shallots, ginger and chili stir fry until fragrant
2. Add in mushroom and stir fry for a while.
3. Then, put in fried tofu and sauce.
4. Braise over low heat for 5 minutes until tofu absorbs the flavor. - Serve -

Note: You can also add in minced pork to fry before add in mushroom.

Steam Red Snapper

First time steam fish, it taste good.
Ingredients
1 piece red snapper
A bit of red chili
1 shallots - cut
Few cloves of chopped garlics
3 tbsp soy sauce - depends of the size of fish
2 tbsp of water

Sauce
1. Fry red chili, shallots and chopped garlics until golden brown.
2. Add in soy sauce and water, stir quickly and remove from pan.

Method
1. Rub salt and pepper on red snapper and place on a plate with ginger arranged at the bottom/top.
2. Steam for 10 minutes or until fish is cook.
3. Pour away the ginger and remaining water from fish after steam.
4. Pour cooked sauce to the fish and serve hot. - Serve

Sweet & Sour Black Vinegar Pork Ribs

Got the recipe from my friend, Audrey... yummy!

Ingredients
6 small soft pork ribs
1 shallot - cut
4 small garlic

Marinate
2 tbsp soy sauce
A bit of oyster sauce
A bit of corn starch
A dash of pepper
Half tbsp wine (hennessy)

Sauce (you can reduce the quantity based on own preference)
4 tbsp sugar
4 tbsp black vinegar (折江黑醋)
4 tbsp soy sauce
10 soup spoon water
A bit of black sauce

Methods
1. Marinate soft pork ribs for 1 hour or more.
2. Deep fried marinate pork ribs till golden brown.
3. Arrange fried pork ribs on microwave container.
4. Put in garlic, shallots, sauce & mix well.
5. Cover the lid & cook in microwave for 2 minutes. -Serve-

Notes: If no microwave, you can stir in garlics & shallots in the wok & put in fried pork ribs & sauce ingredients. Slow cook until the sauce is thicken but make sure ribs are cooked during deep fried.

Mushroom Pasta


Dinner tonight but baked chicken and salad turned out not so good.

Ingredients
Penne Pasta - depends on portion desired
1 tbsp Olive Oil
Some Fresh White Button Mushroom - depends on portion desired

Small portion of Red Bell Pepper & Yellow Bell Pepper - cut into small pieces
Prego Mushroom, Green Peppers Pasta Sauce

Methods
1. Put water and olive oil into a medium pot and bring to boil.
2. Put in pasta and cook until pasta is tender. Remove and set aside once ready.
3. Put olive oil into a frying pan and put in the bell pepper and mushroom to cook.
4. Then put in the pasta sauce and continue stir a while.
5. Served pasta top with sauce.
6. Arrange baked chicken & salad on plate. -Serve-

Hennessy Mushroom Chicken

Ingredients
2 Chicken Drumsticks
2 Mushrooms; sliced
Some Fresh White Button Mushroom
1/2 tsp chopped garlic

Marinate
2 tbsp of Liquor; Hennessy
1 tbsp of Soy Sauce
A dash of Pepper

Sauce
2 tbsp Oyster Sauce
1 tbsp Soy Sauce
1 cups of Water

Method
1. Marinate chicken for half an hour and set aside.
2. Heat 2 tbsp of oil then add in garlic.
3. Fry till fragrant then add marinated chicken and keep stir. Then add in mushroom and
continue to stir.
4. Stir in the sauce and marinated leftover sauce and stir.
5. Cover the lid and cook until the chicken is cooked or 15 minutes before gravy dried up.
6. Stir and add a bit of corn starch to thicken the gravy. - serve-

Steamed Potatoes with Lap Cheong


My friend taught me this dish. A very simple, easy and delicious dish.

Ingredients
1 Potato; sliced in thin pieces
1 Lap Cheong; slice in think pieces

Seasonings
1 tsp onion oil and fried onion
A dash of pepper
1 tsp soy sauce/a dash of salt

Methods
1. Layer potatoes onto plate, sprinkle some pepper and salt.
2. Place lap cheong over potatoes.
3. drizzle onion oil and fried onion over potatoes.
3. Steam with rice or steam until potatoes are soften. -Serve-

White Radish Soup


Ingredients
4 Chicken Drumsticks
1 White Radish; peel and cut into thick pieces
5 Red Dates

Seasonings
Salt to taste

Pepper to taste (can put more as desired)

Method
1. Blanch chicken drumsticks in boiling water to remove blood and fat. Rinsed with water once

done.
2. Place all ingredients in a pot.
3. Boil for 1 hours or 2 hours. (i prefer boil longer)
4. Add salt and pepper to taste. -serve-

Steamed Minced Pork with Eggs

Ingredients
Minced Pork
1 Salted Egg
2 Eggs
3/4 cups Water

Marinate - 15 minutes
1 tbsp Soy Sauce
1 tsp oil/olive oil/onion oil (more fragrant)

A dash of Pepper

Method

1. Break eggs and water into bowl and beat the eggs gently; to minimize bubbles.
2. Break salted eggs into bowl and remove the yolk.
3. Stir marinated minced pork with salted eggs white and a
rrange marinated minced pork in a
thin
layer on plate.
4. Pour the eggs mixture over gently.
5. Steam over high heat for about 15 minutes or put inside rice cooker to cook with rice. -Serve-

Note: Got this trick from my friend - Cover dish with aluminum foil to have smooth surface. Try it, so it might look nicer than the photo above. :p

Beijing Emperor Chicken



You can refer the cooking instructions from the packet as well.
Ingredients
Half packet of Beijing Emperor Chicken herbs & spices mix
6 chicken drumsticks
Method
1. Apply the herbs & spices mix on the drumsticks.
2. Wrap chicken with plastic wrapper, followed by aluminium foil sheet.
3. Steam for 1 hours under low heat. -serve hot-

Fried Vege (1)










Ingredients - xiao bai cai
Xiao bai cai (cabbage)
Garlics; minced
Shallots; cut
Salt to taste
Half tbsp of oyster sauce

Ingredients - choy sum
Choy sum
Lap cheong
Garlics; minced
Shallots; cut
Salt to taste

Method
1. Stir fried lap cheong and put aside.
2. Fried garlics and shallots with oil until lightly brown.
3. Stir in the vege.
4. Add salt to taste. -Serve-

* put lap cheong on top before serve

Soy Sauce Chicken

Ingredients
3 drumsticks
7 garlics
Corn Flour

Marinate
1 tbsp Soy Sauce

Sauce
2 tbsp Soy Sauce
2 tbsp Dark Soy Sauce
1 tsp Sugar
A dash of pepper
Water

Method
1. Fry garlics with oil until lightly brown.
2. Stir in the drumsticks.
3. Cover the pot and simmer with the sauce for 15-30 minutes. -serve-

Tofu Minced Pork Porridge


This dish claimed to be hokkien dish because no one i come across heard of this dish before, except one of my colleague who is hokkien, so it is belongs to hokkien family la. :p I love this porridge due to the fragrance of fried tofu and fried onion.

Ingredients
1.5 cups of rice
2 pieces dry tofu; cut into small squares
2 Shallots
Minced Pork

Marinate

1 tbsp Soy Sauce
A dash of pepper

Method
1. Marinate pork with soy sauce and corn flour for half and hour.
2. Fry shallots with oil and put aside.
3. Fry tofu till golden brown and put aside.
4. Put rice to boil.

5. Once boil, put in minced pork follow by tofu and simmer in very low heat until become porridge.
6. Add pepper and soy sauce to taste.

7. Add some fry onion and onion oil. -serve-
